You will need:
4 Chicken Breasts
1 lb of Bacon
Blue Cheese Crumbles
Shredded Cheddar
Shredded Parmigiano Reggiano
Mayo
Grey Poupon Dijon Mustard
Salt
Pepper
Italian or Cajun Seasoning (your choice)
Olive Oil
Buffalo hot sauce
Preheat oven to 450
First step is to make the sauce:
1/4 cup of mayo
Splash of hot sauce (to your liking)
and then add mustard to taste, you want to taste the mustard but not have the mayo be overwhelming
Add salt and pepper to taste.
Next pound out the chicken slightly to help it cook evenly
Spread a little sauce in the middle of the chicken, add blue cheese crumbles (we go heavy on the blue cheese)
Next roll the chicken up, and wrap 3 pc's of bacon around the chicken, secure with skewers
Repeat with the next 3 pc's of chicken
Add some olive oil to your bakers sheet, and place the chicken.
Season with your choice of seasoning (italian or Cajun we like the Cajun), and pepper
add a small amount of sauce to the chicken
Bake at 450 for 21 minutes
Check chicken if its almost done and bacon is looking crispy add a final layer of sauce and top with both cheeses
Cook an additional 3 to 5 minutes or until cooked through.
